This quick weeknight dish delivers a high dose of protein and beneficial Omega-3 fatty acids. Plus, it’s low in FODMAPs! I love cooking with miso because it offers big flavor with very little effort. Simply serve the Miso Glazed Cod over a bed of brown rice with stir-fried vegetables on the side. Viola! Dinner is done in less than 30 minutes.
Makes 1 lb of Cod
½ cup of white or light yellow miso
5 tablespoons wine vinegar
2 tablespoons low-sodium soy sauce
¼ teaspoon cayenne pepper
¼ cup neutral cooking oil such as grapeseed or canola
1 lb cod fillets
2 tablespoons thinly sliced green onion tops (scallions)
- Preheat broiler.
- In a mini-food processor, add miso, vinegar, soy sauce, cayenne pepper and oil. Give it a whirl to blend.
- Line a cookie sheet with tin foil. Place cod on top of cookie sheet. Baste both sides of cod with half of the miso glaze.
- Broil cod 8 inches from heat until it begins to brown. Lower oven to 450 degrees and bake for 5 – 8 minutes depending on the thickness of the cod fillets.
- For serving, drizzle remaining miso glaze over cod fillets and garnish with sliced green onion tops.
